A novel low-temperature mashing schedule for brewing with unmalted sorghum: optimisation
Laboratory mashing experiments were used to investigate and optimise protocols for mashing with unmalted sorghum using a novel low-temperature (Tmax = 78 °C) enzyme blend and mash schedule.
