Fish Gelatin From Surimi Processing By-Products: Extraction And Characterization
Fish gelatin was extracted from surimi processing by-products of four different fish species, namely slender shad (Elongata ilisha), sin croaker (Johnius dussumieri), ribbon fish (Trichiurus lepturus) and threadfin bream (Nemipterus japonicus).
