Among the three solvents, extraction with sodium hexametaphosphate gave the highest yield, however it contained high ash and showed the lowest solubility. Fourier transform infrared spectroscopy of jackfruit waste pectin irrespective of extraction condition revealed a similar surface structure to commercial pectin. |
