Thermodynamics and kinetics of thermal inactivation of peroxidase from mangosteen (Garcinia mangotana L.) pericarp
Mangosteen(Garcinia mangostana L.) pericarp is an abundant source of phytochemicals. Blanching prior to further process stabilizes these valuable compounds.
