Optimization of spray drying process and storage stability of pitaya, Hylocereus polyrhizus (Weber) Britton & Rose pell powder.

Pitaya peel (Hylocereus polyrhizus), which consists approximately 22% of the whole fruit weight, is discarded during juice processing.
