Summary:Studies were performed on five Dioscorea spp. and Colocasia esculenta to determine the physicochemical properties ofstarch from the species. Several physicochemical properties were studied such as, percentage of starch in the species, amylose and amylopectin containing, proximate contain, viscosity, and effect of temperature on solubility. The percentages of starches from Dioscorea spp. were in the range of13.5-16.8%, while from C. escu/enta. the percentage was 13.2%' Percentages of amylose contents in the starches isolated from Dioscorea spp. were in 14.4-23.8%, while for C. esculenta the percentage was 13. 7%. The solubility of starch isolated from D. bulbifera was the highest with the value of 13.96% at 1000C and the solubility ofD. rotunda was the lowest at 10.84%. The peak viscosities for all the starch samples studied were in the range at 202.58-450.83 RVU and D. abvssinica gaves the highest peak viscosity.
