Powder Melon Manis Terengganu (MMT) also known scientifically as Cucumis melo L. could provide benefit to human health as it is rich in nutritionl composition, vitamins, bioactive compounds and minerals. For every harvest, local farmers obtain 0.45 tonne of agricultural waste is in the forms of immature and undersized mature MMT. The following research has focused on reducing agricultural crop waste (about 1.35 ton a year) and in turn converting food waste into food ingredient that benefits health and food industry. Under-utilisation of wasted MMT is a good source of biologically active compounds such as dietary fibres, antioxidants, vitamin C and carotenoids. This study aimed to determine physico-chemical properties, bioactive composition and to evaluate total phenolic content, total flavanoid content and antioxidant properties of both immature and undersize mature MMT peel, seed and flesh powder. MMT was dried using hot air-drying method at 50°C. The MMT powder was assessed for physico-chemical analysis (colour, pH, titrable acidity, proximate content, and total dietary fiber); and bioactive composition (total carotenoid content, total chlorophyll content, vitamin C content); and evaluated for total phenolic content, total flavonoid content and antioxidant properties by using a standard method. The independent t-test, was used to compare the significant difference among the both samples at level p < 0.05. The colour analysis and water activity of MMT powder from this study is retained for analysis purposes. From the nutrional composition, the dietary fiber, crude protein, carbohydrate and fat content was high in different parts of immature and undersized mature MMT. The undersize mature flesh, has significantly higher beta carotene content than immature flesh, and highest chlorophyll ‘a’ content was found in immature peel at level p < 0.05. The range of pH for all the undersized mature and immature MMT was within range pH 5-7. The immature flesh powder was the most acidic at level p < 0.05. The undersized mature seed had the significantly highest vitamin C content compared with immature MMT seed at level p < 0.05. The highest TPC, TFC and antioxidant capacity was found in undersize mature peel at level p < 0.05. The undersized mature and immature MMT shows good presence of bioactive and antioxidant compounds that may serve human health. This study shows that the physico-chemical and bioactive compounds present in undersize mature and immature MMT has the potential as food ingredients or functional food products could be produced from them, while reducing agricultural wastage that is faced by local farmers.
